A Love Letter to the Perfect Bagel
What started as a small dream in a tiny kitchen has grown into a neighborhood tradition. This is the story of flour, water, patience, and a whole lot of heart — baked into every single bagel we make.
What started as a small dream in a tiny kitchen has grown into a neighborhood tradition. This is the story of flour, water, patience, and a whole lot of heart — baked into every single bagel we make.
In the fall of 2016, Daniel and Sarah Cohen stood in a cramped apartment kitchen on the Upper East Side, covered in flour, shaping their very first bagel by hand.
Daniel had spent years traveling — from Montreal to Warsaw to New York — studying the art of bagel making under master bakers. Sarah, a third-generation New Yorker, grew up on the stories of her grandfather's bagel shop in Brooklyn. Together, they shared a simple belief: that great bagels aren't made — they're crafted.
What began as weekend experiments for friends and family quickly became something more. Neighbors started asking for "those amazing bagels." A local farmer's market gave them their first real stage. And by the spring of 2017, East End Bagel opened its doors on East End Avenue — named for the street where it all began.
Today, we're still that same small team with the same big dream: to make every single bagel as if it were our first.
We don't take shortcuts. We don't rush the process. We believe that every great bagel is built on four simple, unwavering principles.
Every bagel is shaped by hand. No machines. No shortcuts. The human touch is what gives each bagel its character — slight variations that make every one unique.
Our dough rests for a full 24 hours in cold retarders. This slow fermentation develops the deep, complex flavor and perfect chewy texture you can taste in every bite.
Before baking, each bagel is boiled in malted water — the traditional method that creates the signature shiny crust and chewy interior of a true New York bagel.
Every morning before dawn, our ovens come alive. We bake in small batches so every bagel that reaches you is at its absolute peak — warm, fresh, perfect.
Great bagels can't be rushed. Our process takes over a full day — from the first mixing of flour and water to the moment your bagel emerges, golden and steaming, from our stone deck oven. Here's how we do it.
High-gluten flour, malted barley, water, and yeast are mixed and kneaded by hand until the dough achieves the perfect elasticity.
The dough rests overnight in our cold retarders, developing the deep, complex flavors that define a true artisan bagel.
Each bagel is individually rolled and shaped by our bakers — a skill passed down through generations of New York bagel makers.
Boiled in malted water, then baked on stone decks at high heat. The result: a shiny, crisp crust with a chewy, tender interior.
From a tiny apartment kitchen to a beloved neighborhood institution — here are the moments that shaped who we are.
Every bagel we make carries with it a set of values we refuse to compromise on. These aren't just words — they're the foundation of everything we do.
We source only the finest high-gluten flour, locally-milled grains, and premium dairy. Quality starts at the source — and we never cut corners.
Every bagel is shaped by human hands. No machines, no shortcuts. The slight variations you see are what make each one uniquely perfect.
We bake in small batches every single morning. What you get is always fresh, always warm, always at its absolute peak.
From compostable packaging to partnerships with local farms, we're committed to reducing our footprint while feeding our community.
We're more than a bakery — we're your neighbors. From sponsoring local events to donating day-old bagels, we give back where we live.
We honor the old ways — kettle-boiling, stone-baking, hand-rolling — while welcoming new flavors and ideas from our diverse community.
Behind every bagel is a team of passionate artisans who pour their hearts into their craft. Meet the people who make East End special.
A third-generation baker who trained in Montreal and Warsaw. Daniel brings decades of bagel wisdom to every batch.
A born-and-raised New Yorker with a passion for community. Sarah keeps everything running with warmth and precision.
The creative mind behind our sweet bagels and seasonal specials. Marco turns every dough into a work of art.
A certified Q-grader who sources and roasts our single-origin beans. Emma crafts every cup with the same care as our bagels.
Walking into East End Bagel feels like coming home. The smell, the warmth, the people — and of course, those bagels. They've ruined all other bagels for me, and I wouldn't have it any other way.
Whether you visit us in person, order online, or join us for a bagel-making workshop — we'd love to welcome you to the East End family.
